A Real Cookie

I don't know if you know this about me: But I'm a bit of a recipe hoarder.

Not that I'm trying to say I'm a gourmet or anything and that people flock to me for my cooking and recipes, but when people like one of my recipes, I seldom hand it out. Sometimes. But not a lot. Like, these molasses cookies I make. I've had several people ask for it, one person repeatedly. I just keep putting them off.


They're not even my recipes. The molasses cookies are published in a cookbook.


So it's kind of horrible of me, because I've only ever really changed and made one recipe mine. All the others have been given to me or pilfered from a higher source.


See? I'm a recipe hoarder.


Anyway, I publicly declared (in a church, no less) that I would share this one. I kind of feel bound.


I got this one from my baby sister. It's like a peanut butter cup that's actually a cookie. Num num, as my children call it.


Peanut Butter-filled Chocolate Cookies


Chocolate Outside
1 1/2 C flour
1/2 C cocoa powder
1/2 t baking soda
1/2 C butter
1/2 C sugar
1/2 C brown sugar
1/4 C peanut butter
1 egg
1 T milk
1 t vanilla


PB Filling
3/4 C sifted powdered sugar
1/2 C peanut butter
2 T sugar


Directions



  • Sift flour, cocoa and baking soda together in bowl

  • Beat butter, 1/2 C sugar, brown sugar and 1/4 C pb in another bowl.

  • Add egg, milk and vanilla to the butter mixture and mix.

  • Add flour mixture to butter mixture.

  • Mix together the PB Filling ingredients in a separate bowl.

  • Form 32 chocolate and 32 PB balls.

  • Flatten chocolate balls, place PB balls in the center, fold and roll chocolate over.

  • Roll in sugar and flatten

  • Cook on parchment at 350 for 8 minutes

  • Cool 1 minute on sheet and transfer to cooling rack

No photos of the finished product -- but that isn't even all my fault. You see, I actually shared my cookies this time.

Oh, these cookies. They make my heart go pitter pat.

Peanut butter and chocolate. Few better marriages have ever been made (though, as your next post seems to evidence, yours is one).
